keep in mind....Less domie & tourney stamped discs are generally less stable regardless of the plastic.

This is not true. My most stable Predator ever (I've probably thrown 50+ Z Preds over the years) was a blue, flat, tourney stamped Z Pred that was stiff as a board. With the Preds there are no solid rules regarding stability and dome. You must check the PLH.

The only problem is your "generally" is a flip of the coin, and not a rule to go by. The PLH is unaffected by a tourney stamp disc- which GENERALLY makes a disc flatter, but has NO impact on the PLH- thus not the factor that influences stability.
Ignore Nate's "domey" comment, and pursue Marmoset's "PLH" one- it's all the rage these days apparently. I won't even begin pretending to explain it, because I'm still learning it myself. It will help you determine how stable/overstable/understable a particular disc is in comparison with other discs of that mold- is THIS predator more overstable than THAT predator, even though they are both the same weight and plastic, etc.
As for the stability of ESP vs. Z- I play quite a bit, and I have yet for either to show themselves to stand out- it's entirely a disc by disc scenario. I usually like to go ESP so I can get some extra grip- if you want a nice big skip at the end of, I'd say go with the Z though.

Freaking read the PLH thread, man. I started a thread on my own about flat/domey discs and as it turns out, they are all across the board.
PLH is the current method for determining stability. I'm sorry to lose my patience, but I swear you don't even read what other people are posting. Just go read that thread that's like two above ours, and see what we're talking about.
Domieness has tons to do with stability....but I just know better...so I'll shut up now.

no dome= NO air resistance
