Here are some of my favorites. Keep in mind, I don't have a big arm and I enjoy shorter, more technical courses. You've already played Thomas and Peter Pan, so I didn't include them.
Longview at Perry Lake- need to play this again, several memorable holes
Rosedale- Down Under (play it when there are no leaves on the trees)
Heritage Park in Olathe (new course and I just played it this weekend)
Prairie Center in Olathe
Eisenhower State Park at Malvern Lake
Glenwood Park in Parsons
Elmwood Park in Norton
Moon Lake on Fort Riley (good mix of shots)
Jackson Park 18 in Atchinson
Wilbur Young and Legacy Park if you are on the MO side of KC.
There are several 9 holers that have some fun shots, but they don't have as many fun shots as these courses.
Oklahoma has several good courses worth driving for. I just played Copperhead Canyon in Tulsa last week and loved that course. Heavily wooded and technical.
