I like Knob Hill, it gets over looked with Moraine and Deer Lakes in that area.

Best "Regular Joe"/Noodle Arm Courses

I just looked over my list of NC courses again, and in the state of North Carolina I would say the best place to go is Burlington. Play Cedarock from the short tees (esp Red when the baskets are in the short position). Then hop right next door to Wellspring and play the short tees for a fun woods course.
I do believe that these 2 courses fit exactly what the OP is talking about! If I could recommend just one place in NC for shorter courses this would be the place.
