A little confused about the cardboard sheets with the 2 slots in them though. What are those used for?

I've used them to keep discs upright when I don't have a full box. With the holes, you can stack them locked together as one piece.

Looks like the box in Trotter's picture looks like it could use one.

They are interlocking spacers - see this pic.

One of mine got completely soaked when my basement flooded, I just let it dry and it is still perfectly fine!

I have one customer who soaks the trays on purpose when they are full. It's his thought that the cardboard swells up around the discs and eliminates and movement within the boxes for his investment discs. Each disc is in a polybag and he uses a dehumidifier to dry the trays out. He doesn't get the lids wet. I don't know if it is actually better or worse but it does seem like there is some thought behind it.
