I've noticed the same thing. I've got an 11x KC Pro EL and it's pretty flippy. On the other hand the 11x Champion EX that I have is like a mini firebird, and it's 166g and pretty gummy. I've thrown a few that were low 170s that were super overstable. I love the EX. Super predictable.
I've got 4 Teebirds in my bag (2 11x champ, 1 star, 1 dx) and 2 eagles in my bag (1 11x KC Pro EL and 1 11x Champ EX). The eagles are very different discs. They feel the same, but fly much differently. I've also got several 12x champ eagles that are nice too.

This is exactly my setup for fairway drivers. The Teebird is one of those discs that's just good in all plastic. Durability = Champ>Star>DX
I love teebirds in all plastics. Stay away from the + mold. IMO, i don't think they fly the same. Hope that helps.

Right to left wind = throw disc with less stability to keep the disc straighter.

Either this ^ or you could try to power down on whatever your stable mid is. That way you're not adding any more discs to your bag. I use my rocs and buzzzes for approach shots. You're not throwing them as hard and they tend to fly (for me) more consistent than putters do.

This is my experience as well. My KC pro is flippy and my champ is overstable. Both are x molds and fly very differently. Both about the same grade on the sleepy scale as well.
