but it feels nothing like esp plastic ... all the ones I've seen have been slick and rigid

As for the ESP Stalker, they made them for the PDGA, all black.
Discraft also made them for 2009(?) Worlds in white ESP plastic, but they feel more like Z.
They also made a limited first run in ESP, but they fly more like Z.
So, they're out there, just OOP and limited runs.
