Spearfish Canyon in SD comes to mind. It's a 27 hole course with a good number alternate baskets available; there are dozens of unique and varied tee shots. (Greens and fairways also have good variety of design.) I don't see myself ever getting bored of playing there. Lots of opportunities to cut shorter loops if time is tight, which would help if you don't have time every day to play all 27.
It's a good hike with lots of vertical changes in play; I'd probably be in a little bit better shape if I played there every day.
