I've played:

BRP
The Valley
kaposia
Lakewood Hills
Acorn
Highland

What are the must play courses?

I guess first in the metro, then if there are any outside.

Other courses that I liked a lot:

Hidden Lake in St. Cloud - Toughest course I played out there
Oakwood - Lots of fun with lots of woods
Bryant Lake - Good elevation and scenery
Kenwood Trails - Mix of woods and hills

Oakwood Hills and CP Adams are both solid choices.

You've hit the main ones.

Red Oak is fun, but not 'must play'.

Some people will tell you to play Fort Snelling (which plays on a Par 3 ball golf course), but I can't stand that one.

EDIT: OOOOH, GoodDrive hits it on the head with Kenwood Trails and Bryant Lake. I like Kenwood better for some reason, but they're both good courses.

If you come down I-35 a couple hours there is Oak Island in Albert Lea, Cedar Creek in Fairmont (2 18's), and Todd Park in Austin (27). All great courses. Bear Cave in Stewartville is good too. I guess I would consider them "must plays" for the southeastern region anyways.

Thanks for the suggestions. I'm hitting BRP this morning, for the 3rd time in 8 days. Next week ill crank out Bryant lake and kenwood for sure and maybe oakwood. I'm waiting to hit oakwood with a buddy who plays there often.

Mont du lac in Duluth/Superior
Giants Ridge in Bibawak (? spelling)
St Cloud has a day cruise worth of great courses
Bryant Lake is a disc golf playground

Play em all! :)
